I’m a medium-rare kind of guy, sometimes medium-rare plus. I refer little to no fat, but love a sizzling hot plate with some melted butter. Sous-vide if I have time, air fryer if I’m in a rush. John is blue-rare, sometimes rare; basically cold in the middle with a nice reverse sear on the outside. Butter, garlic, rosemary… he’s bougie.
